Texas Meteorite #43. 1) Seasond heavily w/SPG and left in the fridge overnight. Started @745am Saturday. The other pan is all the trimmings. 2) After about 5+ hrs, waiting on it to clear the stall. 3) 8 hrs in and just wrapped it. 4) Why I call it a meteorite. 5) Looks good, great smoke ring. Great bark. Great flavor. Dry. I overcooked it by at least hour or more.
