Pasta Salad
About 8 servings
16 oz pasta (usually rotini)
1 lb pepperoni very thick sliced
1 cheese block
1 can small black olives
1 package cherry tomatoes
1 green bell pepper
1 red bell pepper
1 cucumber
Dressing
½ cup olive oil
½ cup vinegar *see notes
1 tsp onion powder
2 tsp sugar
2 tsp Italian seasoning
2 tsp black pepper
½ tsp dill weed
½ tsp basil
1 tbsp salt
1 tbsp garlic powder
Chop all ingredients, mix dressing in jar (mason jar works well for shaking). Toss all together
Notes:
-White vinegar tends to make it bitter after a few days
-white wine vinegar and balsamic seem to not get bitter

Love love love pasta salad. It’s perfect for meal prep and is EXTRA good near the end, when it gets super vinegary.

Definitely making this! Trying not to eat pepperoni these days, anybody have suggestions for a good substitute?
