Spend days researching how to get better bark. Make lots of modifications. Use your WiFi thermometer throughout. Going to do the hot hold option, overnight in the oven. Got an app that has temp based alarms. But, why use that? It’s an oven! It’ll be fine!
So anyways our power blipped last night and I had to throw away an entire 10lb finished brisket. Anyways, what’s your favorite drowning sorrows beer?

Oof. Condolences. That burns. Normally I’d say you could save it, but 7 hours is risky and my old man made A LOT of risky calls with his bbq growing up, so I can tell you for a fact that you did the right thing letting it go. Grill yourself a steak, crack a couple of cold ones, and pour one out for your brisket that didn’t make it.
189 seems like a healthy temp for sitting 7 hours. If you never opened the oven after it cut off I’d almost say most of the heat stuck around.

I’m considering adding an uninterruptible power supply (UPS) for this scenario of a power blip in the middle of a cook and I’m not around. It won’t help for a prolonged power outage but would help if the power goes out for a bit. If anything else, it would give me time to fire up the inverter generator and save the cook if need be.
