I read you are supposed to pick cubanelles before they are ripe… I always thought you wait for any pepper to change color and then harvest

Pick em how you like em. The flavour will change when ripened, but you can eat them either way. Let some ripen fully and eat some unripe and see what you prefer.

“Supposed to” is relative. While cubanelles are traditionally used before full maturity in many recipes, you harvest them when you want according to your taste and needs. Same goes for any pepper – well except habaneros or any C. Chinese pepper because I personally think they taste like absolute crap if they aren’t fully ripe lol.
