    This meat is difficult to prepare, on a grill, I would use a griddle. In japan they simply use a hot-plate, and they do not cook it very much, if you do, the fat will leave in a hurry.

  18. Maybe I’m just being a contrarian but without a pic with an actual bite through one of the pieces, it’s hard to conclude it’s as overcooked as it looks. Assuming of course that OP seared those little turds individually and those pieces weren’t cut after the cook. I’m also assuming this is his son’s plate which is why it looks like something you’d serve a toddler.

    Funny thing about wagyu, my wife (Japanese) gets so confused about words like “Australian Wagyu” because wagyu just means Japanese Beef.

    Cook wagyu in a pan rather than on a grill. That way you can enjoy the rendered fat on the steak.
