    I don't understand some people in the comments who ask for tradition, there is work for anyone if you do good stuff and this guy seems to make very good products; by the way, is not the first (for sure will not be the last) to make this bakery-pastries in Rome (thankfully I add).
    People who want something more traditional (including cornetti, maritozzi, veneziane etc) have plenty of other places to go (choose well though, traditionals or not, have to be good).
