Really happy with how this batch turned out! We split it up by shopping Friday, chopping/prepping Saturday and cooking Sunday, which helped a lot. Another thing we did was cook all the brown rice in coconut milk, that made the texture and taste a lot better!
• Taco Bowls: coconut lime chicken, grilled peppers and onions, southwest black beans, southwest potatoes, southwest sour cream, guacamole, and esquites
• Meatloaf, Mashed Potatoes and Brussel Sprouts: turkey meatloaf, mashed potatoes, and brussel sprouts
• Veggie Green Curry with Honey Maple Carrots: the curry is just Mae Ploy curry paste, mushrooms, asparagus, peas, brown rice cooked in coconut milk and ginger, and honey maple carrots
• Teriyaki Turkey Bowls with Ponzu Broccoli: teriyaki turkey bowls and broccoli boiled in ponzu sauce (definitely recommend steaming the broccoli instead….)
Not pictured – peameal bacon breakfast sandwiches which turned out great!
