Ingredients:

Corn Seasoining:

►1/4 tsp garlic powder
►1/4 tsp onion powder
►1/4 tsp paprika
►1 tsp Everything But the Elote seasoning (Trader Joe’s)
►1/4 tsp Salt & Pepper

Salad:

►1 can corn, drained
►1 tbsp butter
►3 heads romaine lettuce, chopped
►1/2 red onion, sliced
►1 lb carne asada steak
►1 cup pepper jack cheese, shredded
►3 avocados, diced
►Sunflower seeds, for garnish
►Crispy jalapeño chips, for garnish

Creamy herb dressing:

►1 cup mayonnaise
►3 cloves garlic
►1/2 cup parsley
►1 cup cilantro
►1/2 cup chives
►7 basil leaves
►2 tbsp red wine vinegar
►Juice of 1 lemon

Cooking instructions:

1. Prep the Corn: Open and drain a can of corn. Melt 1 tbsp butter in a pan over medium heat. Add the corn and season it with garlic powder, onion powder, paprika, Everything But the Elote seasoning, salt, and pepper. Cook, stirring occasionally, until the corn is nicely browned. Tip: Don’t be afraid to let it get a little charred for extra flavor!

2. Assemble the Base: Chop 3 heads of romaine lettuce and place them in a large bowl. Add the cooked corn and sliced red onion.

3. Cook the Carne Asada: Cook your carne asada steak for about 5 minutes per side, or until it reaches your desired level of doneness. Once cooked, chop it up into bite-sized pieces and add it to the salad bowl.

4. Add Cheese & Avocados: Shred 1 cup of pepper jack cheese and dice 3 avocados. Toss both into the salad.

5. Make the Dressing: In a blender or food processor, combine mayonnaise, garlic, parsley, cilantro, chives, basil, red wine vinegar, and lemon juice. Blend until smooth and creamy. Tip: Taste and adjust seasoning as needed!

6. Combine & Serve: Pour the dressing over the salad and toss everything to coat well. Sprinkle with sunflower seeds and crispy jalapeño chips. Serve immediately and enjoy!
