I like Greek style ribs. I usually use a whole back section but these should work.
I make a marinade (onion, garlic, honey, lemon juice, olive oil and oregano) and add it to bags with the ribs. Then I cook them at 165F for 24-36 hours.

I’d go 165 for 12 hours first time around, coat em with some sauce and broil until they look good. Since their British, I’d try and be as polite as possible about the whole thing and keep it tidy.
ETA: 73.5°C, and I apologize, but I don’t know how to convert to metric hours.
