(And yes they are completely solid, and well done)

  2. Get an egg circle and cover it near the end to steam the yolk to your desired doneness

Overcook it in a metal ring in your pan

It looks like op used an egg ring to cook it. Just cover the pan when you cook it, and add about a tablespoon of water to help it cook when you cover it. I have this particular egg ring myself. Very cute and versatile https://a.co/d/4IOVfBx

An egg ring. A metal or silicone hollow cylinder that will sit inside a pan without there being any gaps around the base.

Don’t crack the egg directly into it, but crack it into a bowl, then add when the pan is hot.

Both the pan and ring are greased with butter or oil before you start, semi-obviously… but you may want to drop a knob of butter in there just before you pour in the egg.

Just Google “egg ring” and you will see lots of examples and suggestions of which kind to use and how to use them.

Looks like it’s done under a heat lamp in my unprofessional opinion. I’m guessing a buffet?

Use a ring to keep the shape perfectly round, lightly fry them on a low to medium heat. This will set the white without adding any colour to it

You’ll get a real smooth white and yolk that way, so if you want that look then that’s all you need to do

If you want that rougher/bubbled look, as soon as the egg is set just enough to move (so still pretty runny) take it off the pan/hob. Since I’m assuming you won’t have a heat lamp, place it on a low grill. Low-ish heat with the egg as far away from the heat source as you can

A bit of trial and error there should get you close

You could also bake them in a jumbo muffin pan, with pats of butter.

Fun fact!: if you don’t have a metal egg ring you can cut wide onion rings and cook the eggs in that! If you start the onion ring first and let it cook a while on both sides before you drop the egg in, it’s extra tasty.

Break the white while cooking it to expose the yolk

I have seen people do it with a mason jar ring. Use wide mouth glass to remove center of piece of bread. Biscuit cutter. silicone ring. metal cookie cutter.

what is this sad excuse for bandeja paisa?

This looked like egg whites separated from yoke. Then whites poured, then yoke dripped on top. Like remaking the egg but MORE perfectly.

You put them in one of those thingies

If you happen to have small springform pans you could also just use the round metal part.

Find the worst reviewed cafe in your area and go ask the chef how he does it

This is not helpful, but you should meet my ex girlfriend who never made it to girlfriend. ( to her benefit, I promise) . She does eggs like nobody’s business. Slutty eggs. She’s a genius .

Strain out the water before you fry them.

We like to make our eggs round like this to have on muffins. We tried the rings, silicone and steal, they sucked. So, we bought a pan from Amazon that makes four and it’s awesome. Drop a dab of butter in each one then some chives. Drop the egg in and flip half way though cooking with the handy dandy flipper that came with it. Perfect round eggs every time.

So many people saying egg ring and steamed at the end, but it doesn’t look like that to me. When you do that, first of all, the egg is round. This is not a circle, exactly. Also it would be glazed white over the yolk if steamed.

I think it was fried hard and possibly basted with the cooking fat.
