Prosciutto & Melon Appetizer
~with phyllo and ricotta

Serves: 2 – 4 people

Total Time 40 minutes

Equipment

1 small pot
1 small bowl
1 medium bowl
1 strainer
1 2-inch ring mold or use an aluminum cup / small knife
1 dozen aluminum cupcake tins
1 baking rack

Optional: Za’atar spice, orange zest, and fresh sprigs of dill

Pre-heat the oven 350 F˚

1 pack of prosciutto cut in 4-6 horizontal strips
½ cup of strained whole milk ricotta
honey
cantaloupe cut into ¾ in cubes (First remove the seeds and cantaloupe skin)
thawed phyllo dough
3 Tbsp unsalted butter
1 Orange
3 Tbsp extra virgin olive oil
Dried beans

1. Clarify the butter by heating 3 tablespoons of butter in a pot for 5-8 minutes. Do not stir the melted butter in the process then shut off the heat and skim off the milk foam or milk solids on top leaving only the butter fat remaining. Allow the clarified butter to cool then add to a small shallow bowl along with 3 tablespoons of extra virgin olive and stir.

2. Use a 2-inch ring cutter or trace and cut the aluminum cups over the phyllo sheets to get 4 clean circles. Then divide those in half by splitting half in layers in each bundle to create a total of 8 even stacks of phyllo circles.

3. Dip each phyllo stack into the clarified butter and remove the excess oil then place stack into an aluminum cup. Sprinkle za’atar on top then add another aluminum cup on top and fill with dried beans (3/4 way full) and bake for 8 minutes then remove the tops and bake for another 7-10 minutes until golden brown.

4. Strain ½ cup of whole milk ricotta over a bowl. Then wrap the prosciutto over each cantaloupe cube. Assemble this appetizer by adding 1 Tbsp of strained ricotta to each crispy phyllo cup. Then add 1 piece of Prosciutto wrapped melon on top.

5. Finally drizzle some honey on top and add 1 sprig of dill on top of each prosciutto and melon cup
