This 38 ounce/1125 ml bowl contains 426 calories, after adding the peanut dressing! It's cold, spicy, flavorful and refreshing.
The peanut sauce recipe is in one of the pictures. The sweetener I used in the sauce is the peach flavored Jordan's Skinny Syrup. I find peach syrup goes extremely well in savory foods that are sweet and spicy.
The textures are great together, and it takes forever to eat compared to a constructed spring roll. I'm not sure that I would do anything different except to prep enough of all the ingredients so I can assemble this much faster.
This would make a great packed lunch with the dressing packed separately.
