    Recipe for orange and maple glaze? I usually use honey and soy sauce

    Brine:
    4 cups cool water
    1 cup maple syrup – HAS TO BE REAL MAPLE SYRUP
    1/2 cup brown sugar
    1/3 cup kosher salt – HAS TO BE KOSHER
    zest of 1 orange

    Brine for 12 hrs in the fridge

    Remove and place on wire rack. 8 hrs in the fridge uncovered

    Glaze:
    1/2c maple syrup. Real maple syrup!!
    1/3c orange juice

    Smoke @165f for approx 4 hrs. 140f internal temp

    Glaze every 45 min while smoking
