Did some pork chops today. Third real cook on great mix of fun, frustration and learning. I seared it bit extra at the at the end because they didn’t carry temps during the rest like I wanted. Always fun with the Joe.

Major takeaways:

  • Don’t skimp on adding charcoal at the beginning.
  • used some pimento wood chips and leaves and leaves. Not sure how much of it got on the pork but a fun experiment either ways.
    — The cast iron grate does a great sear until the soapstone goes on sale lol.
  • it’s hard to Kamado and hold a camera at the same time, shout out to the social media peeps !
