45g egg white powder
225g water
Mix together in your stand mixer on low to incorporate the mix then mix on high until a good thick foam combines.
Then place a spoonful onto a flat griddle or pan on medium heat, cook until it puffs and then deflates flat.
I've only tried cooking these on my cuisinart griddle with two flat hot plates set to approx 350F and cooked for about 30 seconds per piece. Make sure to spray down griddle everytime to stop it from sticking.
I mixed using my kitchen aid stand mixer to blend the water and powder.
1 min on speed 3 to blend
1 min on speed 6 to start the whipping
3 mins on speed 10 to fully fluff the mixture!
