For the past four years my friends and I host a pig roast in my backyard, and for the second year I’m making ramen broth with the remaining bones
Just got it to a boil, and now dropping the heat. Planning to go for ~18 hours. This is maybe the best thing that I made last year. I’ll update tomorrow with the final broth. Planning to freeze for a ramen night sometime this fall

That’s awesome! Question though. If you are doing the broth outside do you have a problem with bugs in the broth

We went to a new (to us) diner in Ft. Lauderdale recently, and they had a smoked pork breakfast ramen on the menu that rocked my world. The broth was SOOO smoky, and they topped it with house-smoked pork belly and breakfast sausage. OMG so good! Sorry, your post just reminded me of that somehow.
