Cajun seasoning, extra garlic powder, onion powder, black/white pepper and a splash of soy and some fish sauce.

Love doing this, it’s going to come out great.
Would highly recommend investing a tiny bit of money in ping pong balls. They do so much better than the shrink wrap, don’t drip everywhere, they help get to and keep temperature just right, helps with evaporation, and are easier to manage if you need to get in there during a cook. I do a double layer on top and it makes cooler cooking much easier.

Where do you get your prime FIB from? Here in Chicago, I can only get choice, I have to drive to Michigan to even hope to see prime FIB.
