Found a new fat free cheese (LifeWise) that makes it easy to make super cheesy delicious mac and cheese for minimal calories. This bowl was 360 calories and didn’t taste “diet” at all.

    Got turned on to this cheese by a post on the volumeeating subreddit. It got high praise so I ordered it even though the price and shipping made it pretty steep. I’ve cooked with other fat free cheeses in the past and this is SO MUCH BETTER for mac and cheese. It’s 40 calories an ounce and has an intensely cheesy flavor. It melted like a dream in my stovetop mac and cheese recipe and 2 ounces was plenty for 4 ounces of pasta (plus 2 laughing cow wedges for creaminess.)

    My recipe is boil 4 ounces of low carb pasta in 2 cups of chicken broth (I use Knorr bouillon cause I like the artificial flavor honestly) and when the pasta is close to done and most of the liquid has been absorbed I add my cheeses and continue to cook on low until the pasta is done and the sauce is the right consistency. It’s so easy and with this cheese you literally don’t know you’re sacrificing anything.

    I know this is a different product entirely, but I’ve also recently discovered powdered cheese that you can buy online, it’s like the cheese packets that come in Mac and cheese, but you can use it however you’d like.

    $1.19/oz for a pound which is a lot of cheese, just wanted to share an option though.
