First time doing baby backs ever. Turned out better than expected.

Dry rub (I did oversalt…) and put in at 300f for 1 hour. Used 4 tint blocks of cherry wood. Then I wrapped 2 in foil with 2 different bbq sauces (Kinders and Bachan). Left one unwrapped. Placed the wrapped ones bone up. Finished cook just under 2 hours total time. Wrapped the unwrapped one for resting. Let rest for about 30 min before cutting.

Light smoke ring as expected. Unwrapped one had some nice bite and came clean off the bone. The wrapped ones ended up being too tender and fell off the bone. I'm definitely on team no wrap for hot and fast.

I'm glad I tried both methods to see what worked. My friends also preferred the unwrapped texture, though the Kinder's sauce was a hit. I'll probably do a light glaze of it in the future.
