And what temp did you take it too in the sv before the sear …..this is what I struggle with ……I take it to the blackstone and I over cook it ……I like med rare

I had mixed results searing on charcoal. I’m not sure I’m doing it right. The first time I oiled the steaks and they seared great, next I went without oil and the sear wasn’t good.

The only way I like steak better is slowly bringing the steak up to temp on a Traeger then searing it in beef tallow on cast iron
