Apologies for the not so appetizing picture, forgot to take a pic of the plated thing. Just wanted to share a tip for the meat and veg in a flatbread lovers.
To cut down calories and stretch out whatever meat (or "not meat" for vegetarians like myself) I add eggplant and mushrooms. They don't impart any noticeable flavour, but make a huge difference calorie wise. For flavour I like to add an onion, but that adds volume as well.
Cut all into strips and toss with whatever seasoning you like. This time I added garlic, oregano and rosemary for a souvlaki vibe. Best done on a griddle with a touch of oil, but even a normal pan will suffice. Just has to be big enough to sear and not stew. In a pita pocket with some garlic yoghurt sauce, chilli sauce, lettuce, tomato and cucumber it came out at around 200 kcal for one.
Also super good tossed over some oven roasted potatoes, with a bit of cheese, garlic sauce and chilli sauce for a cheats HSP (may be more of an Aussie thing).
I imagine even a banh mi would be achievable, if one had a low cal-ish bread roll 🤔
