The recipe is from the Skinnytaste Simple book. I swapped out the cottage cheese for 2% Fage Greek yogurt and skipped the onion. The EVOO is optional. I recommend weighing your own version for accuracy.

Verdict: Delicious! I needed something approx. 300 kcal and high in protein for my late morning meal. I prepped 7 of these and now have something easy (and pretty!) to grab.
