
First time cooking steak with the sous vide (133 for 2 hrs), first time clarifying my own butter, first time searing with clarified butter and my first sear on cast iron. Turned out pretty good, but the sear got away from me a little bit. More smoke than I was expecting.

It looks like the sear was not hot enough and you left it in there for a while.
No need for the butter in the cast iron pan, just get it red hot and sear straight on the iron.
If you want a good sear your smoke alarm should be going off. Also those mashed potatoes look amazing
