Cooking this was exhilarating. I feel like this is the first time I’ve been challenged by Hellofresh in a while. This type of recipe was reminiscent of an old meal kit company that I used to get in 2013 or 2014 called “Plated” aka the best meal kit company that didn’t survive. I’ve never cooked soufflé before, and I’m not sure I ever would have without a meal kit recipe.

That being said, I’m not sure that soufflés are for me. I’m not especially fond of egg & cheese heavy dishes (don’t really like quiches), so this was almost doomed in that regard. I don’t think that this deviates too far from how most cheese soufflés are made, except in using a cheaper cheese. The typical ingredients are pretty inexpensive anyway.

What really lacked here was the vegetable/side dish. We were given such a small portion of green beans, and there wasn’t much done with them (you stick them in the microwave for a few minutes). Not frying them was a good call given the amount of fat in the soufflé, but I don’t think the toasted panko works on top of steamed green beans. Panko doesn’t stick to steamed green beans. I think they only do this because you’re already using a little panko for the soufflé and you provide the butter to fry them in, so it’s no extra cost to the company.

They forgot to send flour in the bag, but I’m not sure I want to talk to customer service about a tiny bag of flour. The last time I complained to them, it was about the non-vegetarian dish they marked as vegetarian and the agent asked if I was vegetarian, as if that would be the qualifier to getting a refund for a mislabeled item.

Emir gives the soufflés a 10/10 as long as it’s not lava hot, but he’s not pictured due to the speed I had to take the photo before it collapsed (you can’t be late to soufflé).
