Went with a sear sauce this time and a light Japanese style sauce post sear. Went with something old from the cellar as accompaniment. Got perfect rare on the fillet and medium rare on the strip as planned

    Almost a 20 year old Rioja. I’m guessing $80.00 now.

    If so I hope it’s dry aged or prime meat.

    Then again I have had chateauneuf du pape with hamburgers so I should probably shut up.
