First recipe post, hope to post a lot more for everyone I've used the last 18 months on my journey.
I make this Chicken Fried Cauliflower Rice recipe 4-5 times a week, especially if it's a day I don't have a run scheduled and need a little lower overall calorie count. If I eat this whole recipe in one go, it's between 2.25-2.5lbs of volume, about 500-550 calories and absolutely delicious.
I sometimes split this into two servings, then add a bag of brussel sprouts or other cooked veggies as separate sides.
You can sub out some of the chicken for grilled or your meat of choice, I really like the taste and calories of the RealGood brand when I want breaded chicken instead of grilled.
Ingredients:
- 6oz – RealGood Lightly Breaded Chicken Strips (180 cals)
- 2 – 12oz bags of cauliflower rice (160 cals)
- 1 – 8.5oz can of diced peas/carrots Great value (120 cals) – use your veggies of choice here
- 5 to 6 servings of G Hughes Stir Fry sauce (5 cals/serving)
- Assorted seasonings of choice (Pepper, Salt, garlic powder, etc)
- 2-3 servings of oil spray of your choice (20-30 cals)
Directions:
In a large sauce pan on medium low heat I put both bags of cauliflower rice to cook per the instructions, but on lower heat to give me time to prep the other ingredients. Add seasonings and a bit of water for cooking while stirring occasionally.
Dethaw chicken in microwave, dice into small pieces, set aside, or toss in convection oven to crisp up until adding to dish later.
When the cauliflower rice reaches a warm temp, add the peas/carrots, sauce, and chicken, stirring for 5-6 mins on low heat to finish cooking.
