  1. This vaguely resemble a Penovani Khachapuri, which is the least Khachapuri-like of all Khachapuri (still delicious though)

    Might as well call this a cheese pasty.

    The choice of cheeses is what i find least offensive. In British supermarket it wouldn't be hard to find something more similar to Georgian cheese style.
    But, it's supposed to be a farmer's/ home cooking recipe and you would stuff it with whatever is available to you locally

  4. I wouldn't call this khachapuri or even a version of khachapuri, it's a totally different dish, from top to bottom. Maybe he had too much Georgian wine with the "khachapuri", if he remembers it this way😄 I bet whatever he made is delicious though.

    The closest thing to Georgian fresh cheese would be Mozzarella+home-made cottage cheese and Turkish salty water cheese with some butter mixed. This is the best I came up with and it tastes almost same 🥰

    Хачапури-лодочка (хачапури по-аджарски)
    Тесто:
    закваска из дрожжей теплой воды, сахара и муки, кефир, мука, подсолнечное масло, соль. Замесить, дать подняться, обмять, дать еще раз подняться, потом раскатывать.

    Начинка:
    Сыр сулугуни, имеретинский и/или адыгейский натереть на терке, пропустить через мясорубку или измельчить любым другим способом

    Тесто раскатать, свернуть лодочкой, засунуть в середину сыр
    В духовку до готовности
    Когда будет готово, вынуть из духовки, в лодочку вылить сырое яйцо и выложить сливочное масло.

    Хачапури закрытая (хачапури по-имеретински)
    Все то же самое, только вместо лодочки соорудить здоровую и толстую закрытую лепешку с сырной начинкой внутри
    Вынуть из духовки, продырявить сверху, в отверстие вылить сырое яйцо и сливочное масло

  12. My family became Georgian from my fathers sister about 60 years ago. Since then traditions is in our Ukrainian house. My mom bakes really nice khachapouri since I was a kid until now.

  13. Respectfully, that’s not an authentic Khachapuri. I live in London, and to replicate the original taste, I use a mix of mozzarella and feta, and the dough should be made with yeast or sourdough. We traditionally use oil instead of butter, and you can add a bit of sparkling water or milk if desired. Also, sesame seeds are not part of Khachapuri—we don’t even have that ingredient in Georgia. I understand he mentions in the video that it’s his version, but it’s far from Khachapuri. If it’s that different, it shouldn’t be called Khachapuri—it’s like making pizza with fruit jam instead of a tomato base.

    It's OK to call it a "Jamie Style cheese bun" and that might be tasty, but a proper research should've been done before even trying to cook that.
