Aji Charapita, rumoured to be the most expensive chili per kilo (dehydrated).
It takes a lot of work to get a dehydrated kilo! (Approx 20 000 Charapita)
I dehydrate them and put them in a grinder like black pepper.
It’s much hotter, an essential part of Peruvian cuisine they say.
To get this size harvest in Canada, I overwintered this plant last winter in my heated garage.

That is so cool. What a neat project, and they look good in the grinder 👌

One of my favorite peppers, although the whole “most expensive pepper” thing is just a myth

Gindo’s is a local to me company making an Aji Charapita sauce, and it’s really good. It’s sadly sold out though, I’ve just started hearing about these lil guys and I might try and grow some next year. Maybe in between some orange cherry tomatoes for a surprise 😛
