- Unsalted butter, softened: 4 tbsp (60g)
- Powdered erythritol or preferred low-carb sweetener: 2 tbsp, adjust to taste
- Vanilla extract: 1 tsp
- Coconut flour: 1/4 cup
- Sugar-free chocolate chips or cocoa powder (optional, for coating): Optional
Instructions:
- In a bowl, beat the softened cream cheese and butter until smooth and creamy.
- Add the powdered sweetener and vanilla extract. Mix well until fully incorporated.
- Gradually add the coconut flour, stirring until a thick dough forms.
- Using a small cookie scoop or spoon, portion out the dough and roll into balls.
- If desired, roll each ball in sugar-free chocolate chips or cocoa powder for coating.
- Place the fat bombs on a baking sheet lined with parchment paper and chill in the refrigerator for at least 1 hour, or until firm.
- Store in an airtight container in the refrigerator or freezer. Enjoy chilled!
