


Well my red bell pepper was freakishly soft and about half a cup of water came out when I cut into it, but thankfully a jar of roasted red peppers I’ve been needing to finish up awaited me in the fridge!
This meal was very good, flavor wise.

For full transparency so you’re aware of portion sizing, I always use my own rice.
I’m very funny about rice that has been stored somewhere for an unknown amount of time, and they don’t give enough anyway. I use my own airtight sealed rice, which I cook up about 1.5 cups of for the two of us.
Otherwise, besides having to use the jarred peppers, everything else came with the recipe. Added smoked paprika, garlic powder, umami seasoning, and dried parsley, but I add that to everything I cook.
Made this meal in nonstick “oil-free”.
This is one of my favorite recipes. So much so, I purchase the ingredients and make it outside of the meal kit.
Our bell pepper was bad too 🙁 just had it without and it was still good!
