Does anyone have suggestions for how best to cook this? I've tried a bunch of different things (including separating, soaking, and slowcooking) but the beans still come out mostly hard.

I soak mine for a bit (to make sure dry beans and certain grains cook better/at the same speed as regular rice), then after washing regular rice I add both together and cook. Then you get that nice, fragrant purple-coloured rice, thanks to some black rice grains in the mix.

Add however much you want to white rice, but add an additional 1 to 1.5 extra water to compensate.

Soak your grains over night first before anything and you can add to rice 1/4c or 1/2 depending how much rice you make. 👍

Pressure rice cooker or pressure cooker is my recommendation. Cuckoo makes nice rice cookers.

I soak one rice cooker cup full in water for 30 min, add another cup washed white rice and cook it in the cooker at mixed grain setting.

Oooo I want that. I got a five grain Korean rice mix once that was really good.

I soak overnight and then use extra water when I cook in my rice cooker (mixed setting on a zojirushi). They are never tender tender, but at least they are not still hard as rocks. Good luck!

I’ve had good luck with these recently. I portion out 1 cup rinse, and soak in water in fridge for about an hour. Then I wash 2 cups of white or brown rice. If I’m using brown rice I often let it soak as well. Then cook it on my normal white rice setting with about a 1/2 cup extra water.
Comes out great for me but I also don’t have a multi-grain or brown rice setting.
What kind of rice cooker do you have? and how much do you usually cook?

Throw in some butter then the rice and use chicken broth instead of water.

Add a small amount of baking soda to the soaking liquid. It will soften the beans. I’ve never done this with rice though so I don’t know if it will make the rice mushy.
