It was pretty great! The only downside is this isn’t a super quick meal, the risotto takes a little work.

    I add shrimp to the risottos and they turn out great. I’m sure sausage works as well, I just prefer shrimp.

    I’m not sure what I do differently then the recipe but my risottos are done in 15 to 20 minutes. The first one I made I went longer and the rice wasn’t al dente and I didn’t add meat so it lacked some texture other than grape tomatoes (I believe it was a different recipe then this one).

    This specific recipe I don’t roast the zucchini and grape tomatoes. I pan fry the zucchini and shrimp near the end and put the grape tomatoes in the risotto as wholes when the risotto is almost done. I like the grape tomatoes more plump, almost uncooked, It’s a texture thing for me. I might halve them next time cause them squirting in my mouth was unexpected lol.

    Your zucchini looks perfect so how ever you did it that would work for me.

    Also I’m not overly a fan of the sun dried tomatoes, it’s just an odd texture to me. It’s like eating jerky in a meal.
