Late dinner after many large pours of Turkey 101. I had left over pork katsu that I wanted to use. After seeing so many Katsudon videos I wanted to put this together.

Too lazy to slice onions and I didn't have dashi or stock, so I skipped the sauce/broth part. Soft scrambled egg with a fist full of chopped spinach over a bed of rice. Sliced pork on top with katsu sauce and kewpie mayo. You can't really see it but I shredded a bit of cheese into the egg/spinach mixture.
