I’m lucky that the tree in my yard produces edible apples that are actually delicious! And the apples were ready really early this year. I have enough to make apple sauce, apple butter, and apple pie if I want. I’ll probably try to dry some.
Basically I made a cinnamon applesauce then added about 2 cups of it to a food processor with a block of silken tofu and about a teaspoon of vanilla extract, and blended until smooth.
The cookie sandwiches are store-bought apple cinnamon snaps with accidentally vegan vanilla cake frosting. The crumble is just Grape Nuts.
