1/4 Red Bell Pepper
1/4 Green Bell Pepper
1/4 Yellow Bell Pepper
1/2 tsp Chopped Garlic
5-6 Sliced Mushrooms
1 Sliced Spring Onion
1/2 tsp Crushed Black Pepper
1 tsp Sea Salt
Lemon Pepper Seasoning (Optional, or any seasoning you prefer)
Dill Tzatziki (Optional, or any tzatziki of your choice)
Harissa Dressing (Optional, feel free to substitute with your favorite sauce)
2 Chopped Sundried Tomatoes
1 Egg (Optional)
Sourdough Slices
Steps:
Grill the Veggies:
-Slice the bell peppers, mushrooms, and spring onion.
-Heat a little oil in a pan, add the chopped garlic, and sauté until it becomes aromatic.
-Toss in the bell peppers, mushrooms, and spring onion, and season with crushed black pepper, sea salt, and lemon pepper seasoning (if using). Grill the veggies until they’re tender and slightly charred.
Toast the Sourdough:
-Toast your sourdough slices until golden and crispy.
Assemble the Sandwich:
