I love to eat raw tomatoes but I have more tomatoes than I can eat. Is there a way I can store them so they don’t go bad so I can finish them?

Fermenting tomatoes works very well. It changes the acidity and taste (not bad, just different) but they will keep their texture better than most other methods.

Cherry tomatoes are easy to freeze, I just toss them in a freezer bag and put in the freezer. I have several quarts stockpiled from over the summer

We roast ours really low and slow in the oven. Like 250 degrees for 2hrs. And then freeze them in ziplocks. When defrosted, they basically become tomato sauce consistency with zero work on our part.

Not really but I love making soup of them. I just did so yesterday, as I have a lot of them too.

For fresh eating: Cool dark place, spread out. Dead ripe ones will keep better in the fridge for a couple days than on the counter.
After that, learn to love them when they’re not raw and follow the tips in this thread
Dehydrated. You can make an amazing sauce with dehydrated tomatoes. Or you can vacuum seal and freeze them. If you freeze them, they probably need to be cooked they are not going to be good for slicing after that. Or can them. Or make sauce or chutney and can that.

Lacto bacillus fermentation. Pickle them. They’re delicious. Very easy to do.

Nah you gotta sit down and eat all of them in one sitting

i do ‘sun’-dried tomatoes in the oven & store them submerged in extra virgin olive oil in a wide mouth jar.

Honestly it’s almost soup season here so if you wash, dry and freeze them whole they will make great sweet soup in a month or two.
Short term: Salsa fresca.
Long term: Crushed, Salsa, (I usually smoke the tomatoes for those), and I usually sundry the cherries.
Make a sauce – Hugh’s is amazing 👌🏻
