Hello, this is my first time trying royal icing. I have to say, y’all have the patience of saints. Next question though, does royal icing always taste like crap? I used 3 tbsp meringue powder, 4 c powdered sugar, 9ish tbsp water, vanilla extract, and a tiny bit of corn syrup, but it has a very chemical taste. I used Judee’s meringue powder. TIA (edit: added vanilla extract as well)

You could add vanilla extract for better flavor.

No, it does not have to taste bad. Try The Graceful Baker’s recipe, she replaces most (maybe all?) of the water with lemon juice which takes off that sickly sweet edge. The chemically taste could also be coming from your meringue powder, unfortunately they’re not all created equal.

I, personally, don’t like royal icing. I only use glaze icing. CR Confections recipe is fantastic to taste. Check it out. See what you think.

The best tasting royal I’ve made is when I use Genie’s dream meringue powder. All the others I’ve tried taste off to me. Also, it tastes better when totally dry, so if you’re tasting it wet that could also be why! Wet royal icing isn’t the best lol.

Try Alton Brown’s recipe for the icing. It actually tastes good and my sister who hates these kinds of sugar cookies is obsessed with AB’s.
Recipe is in the description box and then I follow along with her and compare my consistency to her at each step. It’s definitely a trust the process situation, at some steps it looks crazy.
