How can I make this vegetarian friendly/sub the pepperoni?

    I don’t prefer the taste of vegan pepperoni but still wanna add protein!

    You could make a white bean dip like this, but adjust the seasonings to your liking that would mesh well with the other flavors.

    Or keep it simple and use a store bought hummus. Of course these things aren’t even remotely close to pepperoni, but would definitely add protein and work in the wrap.

    Add slices of extra-firm tofu. I would also season the tofu with some spices, but since it has pizza sauce and pesto it’s probably not necessarily.

    You could spread low fat ricotta in these! Or mix it with the sauce! Would definitely go with the pizza theme!

    I would consider sliced veggie “ham” lunch meat, which I can find at pretty much any grocery store in my area (never seen veg pepperoni) or thinly sliced veg sausage links.

    Roll ups in general are easy to fill with vegetarian ingredients but I think those are your best options if you want to stick to this recipe. I like hummus, spinach, tomato and cheese.
