Add slices of extra-firm tofu. I would also season the tofu with some spices, but since it has pizza sauce and pesto it’s probably not necessarily.

You could spread low fat ricotta in these! Or mix it with the sauce! Would definitely go with the pizza theme!

I would consider sliced veggie “ham” lunch meat, which I can find at pretty much any grocery store in my area (never seen veg pepperoni) or thinly sliced veg sausage links.
Roll ups in general are easy to fill with vegetarian ingredients but I think those are your best options if you want to stick to this recipe. I like hummus, spinach, tomato and cheese.
