I've had one of these for a while, it's basically a metal pot that fits inside an insulated enclosure. Anyone use one of these in lieu of wrapping and placing in a cooler? Thinking of just placing it directly into the pot and then sealing up for an hour… Or does the paper and cooler actually have a specific function?

  1. I’ve never wrapped a butt on the grill, just send it to 205 and rest for ~30+ min. If I need to hold it before serving I just keep it on and drop the temp to 200.

    Not this but twice in a crockpot and they came out fantastic. 5 hour smoke, 5 hours in the crockpot to 210F internal temperature.

    If it’s basically a cooler with a metal lining, there shouldn’t be any difference to a non wrapped brisket in a cooler. Seems like this would make an easy cleanup, especially if you can throw that in the dishwasher.
