Not too bad for the first attempt.

Prepared the skin by poking it with a knife tip all over then letting it air dry (no salt added) on a wire rack in the fridge for 3 days. Skin finally stiffened up so it was ready to go.

Meat side direct @ 300f (that's what the dome showed) for about 10 min, then flipped to get Direct heat on the skin. Hearing the crackles was great and felt like hearing microwave popcorn popping over time. Checked on it every 2 minutes to make sure nothing burned.

Finished indirect, skin side up, at 350f til probe tender. Pulled around 198. Rested 15 minutes then sliced ot skin side down.

11/10 would do again.
