Russet potatoes, cut however you want.

Bring a pot of water up to a simmer with some salt and a quarter tsp of BAKING SODA (SECRET).

Simmer, not boil, for up to 5 minutes. Your not trying to cook them yet, just simmer gently to get the baking soda to draw out the starch to make them CRISPY when you bake them.

Drain well and transfer to a large bowl. Large so you don't break every fry.

Season (1tsp salt, garlic powder, onion powder, sweet paprika). Season heavily and fold over the potatoes gently as you season. You'll notice a paste forming on the surface of the fries, this is the crispy bits! If you don't care at this point, coat in oil, but not if your Volume eating, just leave as is.

Place seasoned potatoes in a preheated air fryer or oven at 400 degrees F. Cook for 20 minutes, turning them half way through for even cooking.

Season again with salt at the end. It woll draw more moisture out of them and make them more crispy.
