This is actually true. My executive chef has a knife he bought in 2001 and it’s still kicking to this day, regularly. I’m an 03 baby.

I worked in a produce dept of a grocery store in the 80s for 5 years. Our knives looked like this. When we needed to sharpen we would sharpen them on the bottom of a coffee mug because we did t have a steel or we borrowed one from the meat dept. we only got k Ives delivered every 2 weeks. When we got new ones they disappeared into holes in the wall or behind boxes to save them for ourselves .
