    “Walk in of X people”, the most dreaded sentence in the last 15 minutes before closing, for any evening shift cook. And of course management wants you to make it even if it’s 1 minute before closing, and even if it’s the dish that creates the most mess.

    The worst is when you can hear the group come through the door. We used to sit super still and just look at each other…like a pack of damn velociraptors were hunting us….

    Uh huh, but SOME (not all) of y’all gonna throw a hissy fit when you call your distributor’s Will Call 2 minutes before they stop taking orders with that case of parsley you HAVE to have or you’ll have to shut the whole fuckin place down. But that’s different, right?

    I’ve been all over this business and it’s always “the customer” that sucks. Y’all just don’t realize sometimes YOU’RE the customer that sucks. Just sayin. Go off now, it’ll make you feel better.
