Pan-Roasted Chickpea Salad: Healthy High-Protein Recipe
INGREDIENTS:
1 cup canned chickpeas (from one 15 oz. can)
Chickpea seasoning:
1/4 tsp salt
1/4 tsp garlic powder
1 tsp paprika (sweet or hot; not smoked paprika)
1 tsp olive oil
1/3 cup yellow bell pepper
1/3 cup red bell pepper
1/3 cup red onion
1 cup cucumber
1/3 cup cherry tomatoes
8 Kalamata olives, halved
1/4 cup parsley
Dressing:
1/4 cup olive oil
2 Tbsp Champagne vinegar
2 Tbsp lemon juice
1 tsp dried oregano
3/8 tsp salt, plus more if needed
