Depending on brand and material that’s several hundreds worth of damage to your property. I’d seriously be requesting him to pay for a new set after that and looking elsewhere for someone more respectful to work for

That’s pretty fucked. Chef owes you some knife re-finishing at the place of your choosing (ie, some place you can mail your knives for a professional restoration), if not some new knives.

Looking at that middle knife, I’m going to assume that this was his first time sharpening anything.
I’m not even sure the blade is straight anymore. I’m pretty sure he went too slow, then sped up, then too slow again. And I think that there’s at least three different angles. It was probably a bench grinder with one single random grit, not even intended for sharpening knives.
If that’s what acceptable, maybe I should start a sharpening business. I might not be great, but I’m not that bad. Practice for an hour on my guided stone, and my guided grinder, and I’ll be set. And at least it’ll be consistent.

One of the worst days of my life and honestly the day i gave up trying to be at any place respectable. I was working a place in Eugene Or. A van guy came in regularly. Kinda had let my self fall off on keeping everything in my case sharp. Right before lunch started I caught him and handed him twenty bucks. Explained that three of my knives were Japanese style. He nodded and said he knew what he was doing. He elected to sharpen the flat side on all three. Now I use my 165 dollar shun as a fucking pizza cutter. Thankfully I was in the process of moving. My heart hurts typing this. And that was 4 years ago. Ugh

That middle knife is beyond repair. Once the bevel meets the granton edge the knife cuts poorly. There’s no going back on that one.
