    This is normally my favorite staff meal.

    We used to grind up all the pork, duck, and beef trim. Then, add all the charcuterie butt ends through the grinder also.

    Makes a killer pasta sauce.

    Staff should get the best meals, especially kitchen staff, and a break long enough to eat it while sitting, as if the food is not good, customers don’t return…..business will close, yet so often it’s the front of house staff that get treated better…..bizarre
