I have a PitBoss Pro Series, and the smoker is set at 200 for a low and slow smoke. It keeps getting up to 260°, and it’s pretty much ruined my brisket. When I turned it on last night and set it at 190°, it did just fine. I checked it multiple times before going to bed and it was at 190°. It sounds like the auger keeps feeding it pellets, so I don’t understand why it’s doing this? Anyone have any thoughts?

Sadly it’s a Pitboss, which means their temp probe isn’t reading heat properly or there is an issue with the controller.
Have you done the end gap mod??
Ruined your brisket? Probably better cooking it at 260 then cooking it at 200.
Buy a new temp probe and swap it out. I had a small pit boss I picked up for $100 that kept throwing error codes. New temp probe from Amazon fixed the issue.
Independent probe (a la Fireboard or Thermoworks).
Pan of water to regulate temps, at all times in lower cost units.
What pellets are you using? I find if I use the Kirkland pellets I get temp swings like crazy or if its too windy I get the same thing. With the Pit boss pellets the temps are completely stable. I haven’t tried other pelleta than those though.
How do you ruin a brisket by cooking it at 260°? Honestly just saved it from becoming jerky.
Low and slow that pork butt man.
Smoke her at 250 and use the Texas Crutch.
