If you look up a recipe for sekeli gulaš, it’s a Croatian dish for tenderloin with Sauerkraut. So yummy. You can also cut slices and pound them, then bread and fry for schnitzel.

I like slicing thin and further hammer thinning them and frying in a pan and using on Sammiches. If you’ve got a baguette can do some lemon and fish sauce and sliced peppers and do kind of a Vietnamese sandwich with them.
They also freeze really well in whole or after cooking.

I usually just sear and roast, serve with roast veggies and a sauce from the drippings, then the rest gets sliced up cold throughout the week for sandwiches.

Breaded pork tenderloin sandwich for the freezer
Lightly brown the whole loin then add peeled anunked apples and carrots to pan, add a bit of water, and chicken bullion granules for the salt. Pinch of thyme if you have it. Cover and simmer on very low heat. Yummy served sliced with the sauce the apples made.

Make sure you freeze. The best by date usually means frozen. I learned the hard way thinking i was two months away from the date.
