I check in here on occasion to see the beauties you all make but I’m having a bit of trouble. I notice a big difference between what I make and what I see others making, particularly how mine tend to be wider and flatter whereas others puff up more. I get a lot of compliments on taste but I just wish they were a bit more fluffy (is that the right word?) looking.

In addition, I’ve been running into the issue that one side often seems to have stuck down and the feet don’t grow on that side.

Couple things to note. I can’t slap the baking pan down as we have thin floors and the landlady lives right below us so I actually slap the bottom of the pan with my hand repeatedly.

I recently used the Suncore purple sweet potato powder when making a set of shells and the feet turned out perfect. I was going to get other colors but the yellow has bad reviews so I’m stuck again.

Pictured are the vanilla (duh) macarons I make and sell. They have no color added so powder isn’t an option every time anyway. Any help is appreciated and thanks for reading the rambling post.
