Ingredients:
• 3 1/2 cups peeled and cubed butternut squash
• 1 lb. Brussels sprouts, trimmed and halved (~12 oz after trimming)
• 1/2 red onion, cut into chunks
• 12 oz (4 links) fully cooked chicken sausage (I use @applegate Sweet Italian or Chicken & Apple), sliced into 1/4-inch pieces
• 3 Tbsp extra-virgin olive oil
• 2 Tbsp maple syrup
• 1 Tbsp finely chopped fresh rosemary
• 3/4 tsp kosher salt
• 1/2 tsp black pepper
• Suggested for serving: cooked quinoa and arugula
**Balsamic Tahini Dressing:**
• 3 Tbsp tahini (@soomfoods)
• 3 Tbsp balsamic vinegar
• 1/2 tsp garlic powder
• 1/4 tsp kosher salt
• 1/4 tsp black pepper
• 2-3 Tbsp water (to thin)
**Instructions:**
1. Preheat oven to 425ºF.
2. Combine butternut squash, Brussels sprouts, red onion, and sausage on a large baking sheet. Whisk together olive oil, maple syrup, rosemary, salt, and pepper, and toss with the veggies and sausage to coat.
3. Bake for 35 minutes, tossing once after 20 minutes.
4. While baking, prepare the balsamic-tahini dressing by whisking all ingredients, adding water gradually until smooth and creamy.
5. Drizzle half the dressing over the sheet pan when done, and serve the sausage and veggies over quinoa and arugula. Drizzle with remaining dressing and garnish with cracked black pepper.
